Sweet Potato Tacos with Roasted Corn & Cilantro Crema

These sweet potato tacos are an easy weeknight dinner idea using pantry staples. I always love having a few taco recipes in my dinner rotation. This one comes together in a little over 30 minutes with minimal chopping. The star of the show is the cilantro crema that I add to almost all of my taco recipes. Toss sweet potatoes in oil, lime juice, and seasonings. Wrap the head of garlic for the crema in foil and place on tray with sweet potatoes. Air fry or bake at 400F for 15-20 minutes, stirring halfway through or until slightly charred and tender.

While the sweet potatoes are roasting, prepare the roasted corn. Heat vegan butter in a saute pan over medium heat. Cut the corn off the cob and add to the pan with the salt and chili powder. Stir occasionally until corn is slightly charred. Remove from heat and mix in minced cilantro.

Heat up black beans in a small sauce pan. Once warmed through, reduce heat to low until ready to assemble.

Once garlic has roasted, add to a blender with the other crema ingredients. Blend until smooth.

Warm tortillas if desired, then layer with sweet potatoes, black beans, roasted corn, and sliced avocado. Drizzle crema over the top.

Instructions

2 sweet potatoes (cubed)

1 tbsp avocado oil

1/2 of a lime (juiced)

1 1/2 tsp chili powder

1 tsp garlic powder

1 tsp onion powder

1/2 tsp smoked paprika

1/2 tsp salt

Roasted Sweet Potatoes

2 ears corn

1 tbsp vegan butter

1 tsp chili powder

1/4 tsp sea salt

1 tbsp cilantro (minced)

Chili Roasted Corn

1/2 cup cilantro

1 head roasted garlic

1 jalapeno (seeds removed)

1/2 cup vegan mayo

1/2 of a lime (juiced)

salt to taste

Cilantro Crema

1 sliced avocado

1 can black beans

8-9 tortillas (corn or flour)
